Peach Berry Pie Topped with Cream Cheese Streusel
Since it has been feeling summery around here lately and I am already making a mental list of summer activities I am looking forward to in the coming months. In that spirit, I decided to put this delicious pie recipe up. Peach berry pie is perfect for Colorado because we get great peaches from Palisade, CO and it is so easy to grow raspberries almost anywhere in the state. The cream cheese streusel is something that I made in an attempt to recreate an amazing pie I had years ago and never had the opportunity to get the recipe for! Hopefully you love this pie as much as my family does! Make sure to put this on your summer to-do list.
For the Pie Filling:
2 cups peaches
3 cups berries (for this pie I used blueberries and raspberries)
Juice from ½ of a medium sized lemon
½ teaspoon vanilla extract
⅔ cup granulated sugar
¼ cup all-purpose flour
For the Streusel
¾ cup Boulder Granola
½ cup all-purpose flour
1/3 cup brown sugar (packed)
1/3 cup granulated sugar
½ teaspoon salt
6 tablespoons butter, melted
4 ounces cream cheese, room temperature
Preheat the oven to 400 degrees Fahrenheit
Prepare pie crust, I used an Immaculate Ready-To-Bake pie crust. Follow directions on box.
In a large bowl combine peaches, berries, lemon juice, vanilla, sugar and flour. Stir and set aside.
In another large bowl combine Boulder Granola (I used Original Flavor, but the choice is yours!), flour, granulated sugar, salt, and melted butter, mix well. In a small bowl whip cream cheese together with brown sugar. Combine cream cheese mixture with granola ingredients, mix to form a crumbly topping.
Pour fruity pie filling into the already prepared pie crust. Next distribute the streusel topping evenly over the filling. Place pie pan on a baking sheet (to catch any overflow, pro tip line baking sheet with parchment paper), place baking sheet with pie pan in oven, reduce heat from 400 degrees Fahrenheit to 350 degrees Fahrenheit, and bake pie for 45 – 55 minutes or until the top is browned and drips and the fruit filling is bubbling.
